    We think [Flavor of Kyoto] is very rich and deep in flavor.
    We are particular about the details on mixtures of dough, the way to cut cabbages, compatibilities with sauces, and conditions and the thickness of noodles for us to make rich and deep flavor.

    Okonomiyaki

    Using a lot of "Yamaimo" Japanese Yam to our dough makes them very moist.
    To make our Okonimiyaki fluffy, we start cooking using thin sliced cabbages with airy dough that is whipped after taking orders.

    Yakisoba

    We use uncooked noodles from Kyoto. By cooking freshly cooked noodles to Iron Plates, Noodles will shrink well and get a chewy texture.
