To implement "Kyoto Flavor", we only use carefully selected ingredients. Not only using fresh seafoods and vegetables from markets every morning, sauces and noodles are from Kyoto.
We are using “Kyoto no chi Sauce” made by Long-established Sauce Company “HIROTA Sauce”.
The sauce is very delicious and has Kyoto style flavor that is light, and the Umami can hit you later.
We are using selected un-cooked noodles from "Menyateigaku" which is a company that makes uncooked noodles in Kyoto. Selected thick wrinkled noodles are chewy and you can get hooked.
We use "Kujo Negi (Green Onion)" which are designated to be Kyoto's traditional vegetable.
They are Green Onions that are soft but have a crunchy texture, sweetness and full of flavor.
